Jam Suet Pudding

For 4 people you need

4 oz. flour (with plain flour use 1 teaspoon baking powder)
pinch salt
2 oz. sugar
2 oz. shredded suet
approximately 2 tablespoons milk
2 tablespoons jam.

  • Sieve the flour or flour and baking powder with the salt, add the sugar and the shredded suet.
  • Gradually stir in the milk, binding together. This should be a stiff consistency but as flour varies, you may need a little extra milk.
  • Put the jam at the bottom of the greased basin, put in the mixture.
  • Cover with greased foil or greased greaseproof paper.
    Steam over boiling water.

TO SERVE: Turn out on to a hot dish. Heat more jam as a sauce
