Spiced Apple Charlotte

For 4-6 people you need

For the crumb mixture

6 oz. fine white breadcrumbs
4 oz. chopped suet
2 oz. granulated or brown sugar

For the fruit mixture

1 oz. butter
2 tablespoons water
1 1/2 lb. cooking apples
2 oz. brown sugar
1 oz. sultanas or seedless raisins
1/4 level teaspoon cinnamon or spice

For the topping

1 oz. brown sugar
1 oz. butter

  • Mix the breadcrumbs, suet and granulated or brown sugar well together.
  • Press three quarters on to the bottom and sides of pie dish.
  • Melt butter in pan, add water, peeled cored and diced apples and brown sugar.
  • Cover, heat gently, shaking and stirring occasionally, till apples are well glazed but not too soft.
  • Remove from heat, stir in sultanas and cinnamon.
  • Pour into prepared pie dish, top with remaining crumb mixture, pressing down neatly.
  • Wipe edge of dish, sprinkle crumbs with layer of brown sugar, dot with butter.
  • Bake in centre of oven until golden brown.

Oven temperature: very moderate. 350°F Gas Mark 3-4
