Chocolate Pudding

For 4 people you need

6 oz. plain chocolate
| pint milk
3 oz. digestive biscuit crumbs
1 egg

To decorate

2 oz. chopped nuts
cream

  • Melt the chocolate in a basin over hot water.
  • Add the milk gradually.
  • Stir until thoroughly blended.
  • Pour into a saucepan.
  • Add the biscuit crumbs and stir until the mixture thickens.
  • Add the egg yolk and simmer for 2-3 minutes, stirring the whole time.
  • Cool slightly, then whisk the egg white stiffly.
  • Fold into the mixture.
  • Pour into the oiled mould.
  • Stand in a baking tin of hot water.
  • Bake for time and temperature given.
  • Allow to cool before turning out.

Oven temperature: moderate, 375°F.-Gas Mark 4
Oven position: centre
