Salami Salad

For 4 people you need

8-12 oz. salami
1-2 hard boiled eggs
2 dessert apples
beetroot
radishes
lettuce

French or vinaigrette dressing

1 teaspoon made mustard
pinch salt
shake pepper
pinch sugar
2-3 tablespoons oil
1-1 1/2 tablespoons vinegar or lemon juice

To make French dressing

Blend mustard with other seasoning and the sugar,
work in the oil with a wooden or metal spoon, then finally add the vinegar or lemon juice.
A larger amount can be made and stored in a screw topped jar.

  • Slice salami thinly, keep covered until ready to use.
    Slice hard boiled eggs. Cut peeled apple into fingers, dip in dressing to prevent it turning brown.
  • Roll slices of salami round the apple, secure with cocktail sticks.
  • Cut beetroot into slices; cut radishes into water lily-shapes and put on to lettuce,
    add hard boiled egg, salami, apple rolls.

TO SERVE: With mayonnaise – or additional French dressing,
