For 4 people you need

  1 1/2 lb. small whole fish fillets
seasoning
juice 1/2 lemon
4-5 tablespoons thick cream
2 oz. grated Parmesan cheese
1  oz. butter

To garnish

  parsley.

  • Remove the skin from the fish and place the fillets in a baking dish so the fish looks whole again.
  • Season, add lemon juice.
  • Pour over cream.
  • Sprinkle with Parmesan cheese, dot with butter.
  • Bake in the oven, spoon over the cream once or twice.
  • Garnish with a sprig of parsley

Oven temperature:
moderately hot oven, 375-400°F.-Gas Mark 5-6
Oven position : just above centre
