Jamaican sole

For 4 people you need

2-3 oz. butter
4 large fillets of sole
2 bananas, sliced
2 oz. blanched almonds
juice 1 lemon

  • Melt the butter carefully.
  • Use a little to grease the dish, arrange the fish in this, season lightly, brush with more butter.
  • Cover with a lid or foil.
  • Cook until the fish is tender and opaque.
  • Fry the sliced banana in the rest of the butter for 2-3 minutes.
  • Arrange the fish on a hot dish.
  • Top with the bananas and the almonds tossed in remaining butter and lemon juice.

Oven temperature: moderate,
375°F.-Gas Mark 4
Oven position : above centre.
