For 4 people you need

2-3 oz. butter 4 large fillets of sole seasoning 2 bananas, sliced 2 oz. blanched almonds juice 1 lemon
  • Melt the butter carefully.
  • Use a little to grease the dish, arrange the fish in this, season lightly, brush with more butter.
  • Cover with a lid or foil.
  • Cook until the fish is tender and opaque.
  • Fry the sliced banana in the rest of the butter for 2-3 minutes.
  • Arrange the fish on a hot dish.
  • Top with the bananas and the almonds tossed in remaining butter and lemon juice.
Oven temperature: moderate, 375°F.-Gas Mark 4 Oven position : above centre.
