For 4 people you need
8 oz. peeled potatoes
1 large onion
1 pint white stock OR water
1 oz. butter
1 oz. flour
1/2 pint milk
little cream OR evaporated milk
little extra butter (optional)
cayenne pepper watercress
- Simmer the potatoes and onion with seasoning
and bay leaf in the stock until soft.
- Rub through a sieve.
- Make a white sauce of the butter, flour and milk, and add the potato puree.
stir in the cream, and a little extra butter if wished.
- Season well and garnish with cayenne pepper and chopped watercress.
