For 4 people you need

8 oz. peeled potatoes 1 large onion seasoning bay leaf 1 pint white stock OR water 1 oz. butter 1 oz. flour 1/2 pint milk little cream OR evaporated milk little extra butter (optional)

To garnish

cayenne pepper watercress
  1. Simmer the potatoes and onion with seasoning and bay leaf in the stock until soft.
  2. Rub through a sieve.
  3. Make a white sauce of the butter, flour and milk, and add the potato puree. stir in the cream, and a little extra butter if wished.
  4. Season well and garnish with cayenne pepper and chopped watercress.
