This salmon is very mild and delicate. Well worth a try.

INGREDIENTS

» One large yellow onion, cut into 1/8" rounds.

» 1/2 tablespoon olive oil

» One 10 ounce salmon filet, skin-on (a)

» 1/4 teaspoon basil

» 1/4 teaspoon thyme

» 1/4 cup fresh orange juice

» Black pepper, freshly ground

» 1/4 cup low sodium chicken broth

HOW TO MAKE IT

  1. Sauté onion until golden Move to side of skillet.
  2. Sear salmon (skin side up) until flesh is lightly Turn over.
  3. Add remaining ingredients, on top of salmon. Reduce heat, simmer, covered, 5 minutes.
  4. To serve, cut filet in Place onions on top.

TIPS

This recipe is fast and easy, a good one to make for a party: it’ll fit in one large skillet. Many friends who are not “big” on salmon actually really like this version.
