Seafood A La Creme

 For 4 people you need :

      1 1/2 lb. small whole fish fillets
      seasoning
      juice 1/2 lemon
      4-5 tablespoons thick cream
      2 oz. grated Parmesan cheese
      1  oz. butter

 To garnish:

      parsley.

    1. Remove the skin from the fish and place the fillets in a baking dish so the fish looks whole again.
    2. Season, add lemon juice.
    3. Pour over cream.
    4. Sprinkle with Parmesan cheese, dot with butter.
    5. Bake in the oven, spoon over the cream once or twice.
    6. Garnish with a sprig of parsley

     Oven temperature:
     moderately hot oven, 375-400°F.-Gas Mark 5-6
     Oven position : just above centre
