Salami Salad

  For 4 people you need:

    8-12 oz. salami
    1-2 hard boiled eggs
    2 dessert apples
    beetroot
    radishes
    lettuce

  French or vinaigrette dressing :

    1 teaspoon made mustard
    pinch salt
    shake pepper
    pinch sugar
    2-3 tablespoons oil
    1-1 1/2 tablespoons vinegar or lemon juice

 To make French dressing:

    Blend mustard with other seasoning and the sugar,
    work in the oil with a wooden or metal spoon, then finally add the vinegar or lemon juice.
    A larger amount can be made and stored in a screw topped jar.

  1. Slice salami thinly, keep covered until ready to use.
    Slice hard boiled eggs. Cut peeled apple into fingers, dip in dressing to prevent it turning brown.
  2. Roll slices of salami round the apple, secure with cocktail sticks.
  3. Cut beetroot into slices; cut radishes into water lily-shapes and put on to lettuce,
    add hard boiled egg, salami, apple rolls.
  4. TO SERVE: With mayonnaise - or additional French dressing,
