Roast Lamb with Rosemary

  For 6 people you need :

    small leg of lamb
    2 oz. butter
    seasoning
    Rosemary
    clove garlic, optional
    2 lb. potatoes

 To garnish:

    sprigs rosemary

  1. Spread butter over lamb and season well.
  2. Stick rosemary leaves into the fat of the meat.
  3. Insert a clove of garlic near the bone.
  4. Place joint on a rack in a meat tin.
  5. Roast for 20 minutes to the lb. and 20 minutes over.
  6. Peel potatoes and cut into 1/2-inch thick slices.
  7. Place them under the meat after it has been cooking for 1/2 hour.
  8. Baste joint from time to time
  9. Garnish with sprigs of rosemary.
  10.  TO SERVE: With roast onions or leeks in a white sauce or tossed in butter.

     Oven temperature: hot, 425-450°F.-Gas Mark 6-7
     Oven position: above centre
