Jam Suet Pudding

  For 4 people you need

4 oz. flour (with plain flour use 1 teaspoon baking powder)
pinch salt
2 oz. sugar
2 oz. shredded suet
approximately 2 tablespoons milk
2 tablespoons jam.

  1. Sieve the flour or flour and baking powder with the salt, add the sugar and the shredded suet.
  2. Gradually stir in the milk, binding together. This should be a stiff consistency but as flour varies, you may need a little extra milk.
  3. Put the jam at the bottom of the greased basin, put in the mixture.
  4. Cover with greased foil or greased greaseproof paper.
    Steam over boiling water.
  5.  TO SERVE: Turn out on to a hot dish. Heat more jam as a sauce
